The Zaar, not really a dance but an important ritual. If you are very interested I strongly recommend Sahra's Journey Through Egypt course. I'm going to let Shems tell you about the Zaar You'll note she mentions that the Ayoub isn't the only rhythm used for the ritual, just the one most associated with it. The musicians performing an actual ritual will find the rhythm that most resonates with that spirit. This youtube video sums up the zaar pretty well, too.
There are many ways it can be referenced in a bellydance show, one version is at the end of the first youtube: a theatricalized version of the ritual itself in an educational setting. ShooShoo Amin was known for including it in her oriental shows, bringing in actual zaar musicians to give it authenticity.
Most drum solos will have a bit of the ayoub rhythm and the dancer should acknowledge it in some way. Jillina does it in a particularly spectacular and pointed way in the Bellydance Superstars show. First she references Khaligy dance, when you see the girls in green join her and toss their hair, then zaar when they come back with frame drums and she goes wild. (you can be MUCH more subtle than she is ^_~)
The rhythm is also "sanitized" and used in oriental music, in this movie clip with (the amazing^_^) Samia Gamal the classic song Zeina is used and an ayoub section starts when the camera focuses in the drunk house guest watching her dance.
